"Fast Food" Taco Meal
Being from the mid-west, we miss eating at Taco John's. Well this is all that - and better! 2 soft shelled tacos and 1 order of potato oles coming up.

  • 1/2 cup Soy Taco Crumbles (or soy chips)
  • 1 can Amy's Refried Beans
  • 3 tablespoons Taco Seasoning (to taste)
  • 1 can Diced Green Chilis
  • 4-5 Tablespoons Hot Taco Sauce
  • Flour Tortillas
  • Tator Tots
  • Potato Ole Seasoning (Recipe link in notes)
  • Chopped Lettuce and tomatoes
  • Taco Sauce

Ingredients
  • 1/2 cup Soy Taco Crumbles (or soy chips)

  • 3 tablespoons Taco Seasoning (to taste)

Instructions
  1. Soak taco crumbles in hot (boiling) water. Allow to set until water is absorbed.
  2. Combine beans, taco crumbles, green chilis, taco sauce, taco seasoning and any additional spices you like in a large skillet with a bit of water + 1 tablespoon of coconut oil. Cook until liquid is evaporated and mixture is thick. Spoon into shells and top with lettuce, tomatoes and taco sauce.
  3. Bake tater tots according to directions (425 degrees for 30 minutes) and sprinkle with "potato ole seasoning". (Recipe in notes)
