Italian (soy) Sausage
These are tasty little morsels. Great for pizza topping or in pasta sauce.

  • 2cups Soy – chips
  • 2tablespoons Nutritianl Yeast
  • 2tablespoons White Sugar
  • 1teaspoon Salt
  • 1tablespoon Parsley
  • 1tablespoon Basil
  • 1/4teaspoon Smoked Paprika
  • 1/2teaspoon Pepper
  • 1/2teaspoon Cayenne Pepper
  • 1/2teaspoon Garlic Powder
  • 1/2 tablespoon Fennel
  • 1/2tablespoon Oregano
  • 1/2tablespoon Italian Seasoning
  • 1teaspoon Red Pepper Flakes
  • 1/2cup White flour
  • 1/4cup Extra Virgin Olive Oil
  1. Make 2 flax eggs (2 tbls flax + 6 tbls water) let set for 5 minutes. Add Soy chips+ all seasonings and flour. Add hot water and let stand. Added 1/4 C EVOO after mixed.
  2. To use as topping for pizza or in pasta sauce: form small balls and place on baking sheet and brown in oven. (In pictured pizza we also used sliced Italian Sausage (tofu) sprayed with EVOO before baking.)
